Kuzu Noodles in MisoTahini Sauce
Kuzu noodles are made from the kuzu plant. This dish is especially soothing and strengthening - and very delicious.
 
1 package   Eden kuzu noodles - cooked according to directions  
1 cup   Scallions, sliced in thin strips or diagonally  
1   Carrot, julienne cut  
Miso Sesame Sauce  
  Juice of 1/2 lemon - 3 TB  
1 TB   Cooking water from the carrots  
1 TB   Sesame tahini  
1 1/2 TB   Sweet white miso  
2 drops   SteviaClear  
 
 
1 Place cooked noodles and scallions in a serving bowl.
2 Blanch carrots in a scant amount of boiling water for 2 minutes. Drain and reserve water for the sauce. Add carrots to the noodles.
3 Mix all sauce ingredients in a surabachi or bowl.
4 Pour over the noodle dish.
